For fishing, I'd pretty much second Sluthog's earlier endorsement of Hi Tec Charters out of Quepos ("pretty much" because my luck with them wasn't nearly as good as his). But the owner, John, did hook me up with some real nice folks on a charter, which I greatly appreciated (as I was travelling solo). Another charter company I talked with down there was called Blu Fin, if memory serves. It sounded like their boats had done pretty well recently, but they were unable to get me on an open load trip (and were more expensive to boot). One thing in their favor was the young women booking their trips were cute

These two companies are just down the street from each other in Quepos.
As far as hotels go, in my experience, there are precious few hotels located directly on the beach, but the road between Quepos and Manuel Antonio is almost litterally lined on both sides with hotels. I would recommend the place I stayed, the Mono Azul. No view, but pretty large, clean comfortable rooms wtih AC for not much money. I'd also refer you to the thread titled "Manuel Antonio mid-price hotels" earlier in this section. As pointed out in this thread, buses (and taxis) run frequently between Quepos and M.A. (if you are carless).
