I think you'll find that most restaurants will be willing to cook your fresh catch. Especially if you give them a little extra fish for the chef and/or staff to enjoy also. Actually, I don't think I've ever had a restaurant refuse to cook my catch. And over the years, I've probably had well over a dozen different restaurants prepare my day's catch.
Some restaurants will charge you a per-person price to cook the fish, while others charge a flat rate and bring out the cooked fish on platters, buffet style. It all depends on the restaurant.
If you're really concerned, then you can just look around town after you arrive, and stop into a couple different restaurants a day or two before you fish. Then you can ask them ahead of time. This is much better than driving (or walking) around town, with bags of raw fish, after you've been on the ocean all day, and you're probably worn out from the heat / sun, and you're tired, and irritable, and hungry, and semi-intoxicated, etc.....
