Spend some time in the hotel lobby and restaurant areas well, it will give you an idea of the traffic and the service is at these places.
My only caveat to room switching is when I arrive in San Jose after midnight and I want some late night action, in this case I get a one night room at the Del Rey then move the next day. All of the hotels will let you leave your bags until the new room is available.
Or you could make a reservation, go to the HDR and find something, then take them to your hotel room - I don't think - with the exception of certain times of the year - like Halloweeen, and Superbowl - that its all that hard to get a place in SJ - but I'd never want to come down w/out a reservation
