I have seen segments on the local news with stories of bleaching old chickens not to smell and a hidden camera one where the bread was on the floor before going on trucks .

BUT... The only time I've ever had food poisoning in my life was from some wings at Hoolihans at Mulitplaza Mall in Escazu.

Cartagena Colombia was the place that I got sick. It as back in the 80's and I had eaten at an upper class restaurant named Doris. Oysters Rockefeller was what did it. I was sick the next morning and was with people heading back to Bucaramanga, very long drive and made longer by the frequent stops so I could hurl ever 20 minutes. I was sick for 5 days, the absolute worst experience that I had been through regarding food poisoning. I still eat oysters but have not outside of the states anymore. Other than that I have never been sick from food in any of my travels apart from that and I eat at all the local out of the way places.

I am reading this thread for the first time. Like you it was my first trip to Cartagena where I had problems. I was very sick for 10 days and was so weak I went to the hospital to get checked. Luckily I got sick as I arrived home.

I have been back to Cartagena many times since then and never had any subsequent problems. I guess your system develops a tolerance for that particular locale after initial exposure and then you are protected going forward. I have traveled to several countries but only got sick in Cartagena.
