Any aficionados out there? Myself, I love the stuff and believe it is a healthy food, as good as fish gets anyway considering all the crap we put in the oceans. Know where your fish comes from.

Anyway, I have sampled ceviche at dozens of restaurants and sodas wherever I go in CR. The very best I have had is at Rock y Roll Pollo in Santa Ana. BIG chunks of fish, does not look like it’s been through a grinder, red onion with a pocotito of jalapeno. Excellent and enough to share for an appetizer. Also I have had a Tupperware container of some sorta shark ceviche in Tambor, exquisite but homemade and not to be duplicated anytime soon, alas.

Sopa Mariscos I would have to give to Mariscar in the gulch, for the Sopa Especial. Nothing like seeing the eyes of the beasts looking out at ya from the soup bowl LOL.

Where Else?

I also LOVE ceviche and I have a couple of spots that I regularly eat at. I'm not a big sopa guy.

In my opinion, the best ceviche in San Jose is in La Princesa Marina. The second best is in Del Mar Restaurant (next to Del Rey). The Princesa is a relatively small portion (I always have 2, can go for 3, but I love the stuff). The pieces are not big, but they are firm, not squishy and slimeym, and drenched in acid/vinegar. It's like $3. The DR ceviche is a much larger portion and the pieces are bigger too, but it's a bit dry. It's expensive also ($7)

Do not eat the ceviche in Soda Peru, it's the worst. They have great seafood, but pass on the ceviche. Their sopas are supposed to be awesome also.

In the Guanacaste area, visit a place called Happy Snapper in Brasilito (near Flamingo) for awesome ceviche.

Machu Picchu Paseo Colon - try ceviche de pulpo & sopa mariscos
Inca Grill in San Pedro is good.

On the road to Jaco when you first start along the ocean there is a seafood restaurant on the sea side in a small bay. Something like mariscos by the sea but I can't remember the name -- Gustavo the driver knows the name. The seafood stew is the best.

If you must have great ceviche head to Lima Peru. The cevichería in Miraflores are in an entirely different league.

In Jaco, there is a little tico restaurant on the way to the copacabana. It is on the right just after you turn on the dirt road. I believe the name is Isaga. Also, the little bar next to Hotel Oz and sort of across from Bubba's has excelent sopa de mariscons on Saturdays.

There is a bar in Barrio Mexico. it is called "aqui es Tista" best ceviche I have tried for about 1500 colones.

Take a cab and ask the driver to take you to Tista's bar in Bo Mexico.

You won't regret it.

You can also make your own very easily.

Acquire fresh fish. Corvina is good and so is Dorada and I really like any of the tunas. Cut into chunks the size you like 1/2 - 3/4", and place in a bowl of Rice Wine Vinegar. After about 15 minutes, you will see that the fish has turned from translucent to opaque. It is cooking, pickling actually, in the vinegar.

While the fish is marinating, cut up onion and cucumber to taste. I also add a bunch of tomato. Cover with Rice Wine Vinegar and the juice of 4-5 limes. Add a bunch of fresh ground ginger and some crushed garlic and fresh cilantro, salt and pepper to taste.

After rinsing off the old vinegar, add the fish to the mix. You can also add anything else that strikes your fancy like peppers or parsley. The "classic" recipe does not have tomato or peppers. It needs to chill for at least an hour before serving and is best the next day. Enjoy.

I usually use fresh lemon or lime juice to make ceviche rather than rice vinegar, but for those who have not tried it, it is great. No, correction, it is sublime!

for ceviche I like the mercado central..there are many good places but my favorite there is ...i forget the name but they two floors and the wooden tables and benches are bolted to the floor.
It's on the west side of the market

they greet you right away as you enter and direct you to a table...some only hve benches on one side

The Happy Snapper Restaurant in Brasilito is also one of my favorites, with awesome, fresh seafood every day. Matter of fact, I'll be dining there this weekend with good friends and pretty chica's.

But it has gotten expensive over the past couple years. Most of the "specials" on the board are between ¢9,000 and ¢14,000. And their big lobster dinner is now ¢22,000. Unfortunately, they've "gringo-ized" the "Daily Specials Menu", and it's not much of a bargain anymore.

I usually bring my own fresh fish for them to cook, and they charge ¢6,500 to prepare it, and serve it with a potato & vegetable. Either that, or I order off the regular menu, and prices are from ¢4,000 to around ¢8,000.

Love the place, but it's getting a little overpriced! :( But their ceviche is fantastic!

La Casona (Lally's) in Escazu Centro has excellent ceviche and food in general at very low prices. if you come up the hill from the Scotia Bank and follow the road into Escazu Centro it will be on the right about 200 meters passed the Pub bar.

I thought it sucked when I tried it once. I didn't like it, but all things in life YMMV. It was smooshy/spongy, maybe the fish wasn't fresh that day. I like ceviche that is cut into small pieces, theirs looks like it was pulled apart by hand. :lol: And it's prepared a little differently (Peruvian method?).

The worst I had was across Calle 9 from INS. (The place that still probably has a sign from a Chinese place about 10 years ago) It was quite sweet. They didn't stay around for long. The second worst was at a place in Sabana Sur that lasted a few months that gave me some that wasn't pickled enough. I don't mind sashimi, but half done ceviche is not good. To be fair, they told me it was a little too new. I forget the name but it had a burlap theme and astoundingly uncomfortable stools. I wanted it to make it since I stayed in the neighborhood in those days so I talked to the owner, pointing out that comfortable people drink a lot more. He said that he would replace them when he could afford to. Yet another undercapitalized CR business bites the dust.

Veelee this thread is about the BEST ceviche – come on man fill your glass half-Full lol :D .

This made me think of a bowl of the lime-cooked fish in Tamarindo at ResturanteBar ZullyMar. I honestly don’t remember if it was the ceviche or the fact of sitting right at a table looking out at boats bobbing in an ocean in paradise that stuck in my head a few years ago. At the end of main street just off the ‘circle’.

Ooh jaa – sopa mariscos - Inka Grill. There are at least a couple of them, one easy to find in San Pedro and I’m pretty sure another in Escazu.

Ja in Santana there is Ceviche del Rey! Peruvian - just delicious everything on the menu. Very few ‘grrls’ but the “bartenders” are hot hot hot. On the eastbound old road to Escazu at the corner where the traffic turns north past the back side of la iglesia.
