As the subjects states, do I have to book them in advance?
This is my (and my friends) first time going, so we don't really know if we want to do these activities or even when if we decide to.

Any decent hotel concierge can book most tours with a single local phone call 12-24 hours in advance. works great.

If you are staying around SJ, give Gary a call at Paraiso ATV. He has a great service that you will enjoy. He is also a hell of a guy.

No, you do not need to book in advance. Caution: Many who come planning to book trips as described never make it out of the gulch. They find all the "rides" they need are pink and slippery. 8)
