And that kind of attitude is what makes Bill and BK successful in what they do. Ticos and most gringos doing business here don't get it. I am sure both businesses will feed off of and enhance the other. Personally, I prefer to bounce instead of sitting in one spot for hours. Hang at the SL for a while and then wander down to the Dunn Inn to see what's shaking.

BK, one thing you left out on your list is bartenders. You should hold a recruitment drive in Desamparados, 18-23 years old. Del Rey dropped the ball on this one.

Surprised CVCap did not specify no Ticas need apply

Its hardly inaccurate, they really are too dumb to be scared. Low IQs and no morals or work ethics. Of course there are exceptions, but out of the thousands of Ticos I've ever dealt with in any capacity, the majority are semi-retarded. Many mean well, but just have no common sense. If you argue this, you have not been here long enough.

Irish Drifter you tool. This is BK's thread. For the record, i'm pro-Ticas as far as relationships go, and anybody who disagrees with my thoughts about Ticos either is Tico themself or does not live in Costa Rica for any meaningful period of time. Leave this thread alone, it is for information, not your hateful and disparaging antics.

Chili, our staff will be all female. I will not solicit any of Bill's staff under any circumstances. Even if one shows up with a resume in hand they would have to discuss it with Bill prior to me even granting them an interview. I have huge respect for what Bill has accomplished at the SL (remember 6 years ago the vets laughed at the idea of a little hotel with girls not in the gulch making it). I also consider Bill a close personal friend. Our target list does include a lot of faces familiar to many of you that have come by to inquire about work.

Well said BK and I agree %100..

Perhaps instead of looking for every fallacy to these plans we should be behind and supportive of BK and what they are trying to do. I always say you want good things for good people and BK certainly qualifies. Let's be lucky we have a guy like him in charge of things, instead of that dip shit in Colombia that doesn't allow smoking and stuff..

Thanks for the efforts and taking what we have to say in consideration, I have no doubt we are at the beggining's of something really good.... 8)

I agree 100%. And I am not knocking an all-female bar staff. Hell, it's what we all want. But you can forget top-notch service. The problem is US. Guys screw with female bartenders and they flirt back. We encourage them to behave like girls and that detracts from the actual business of tending bar. Bars are guy-centric, and in my experience guys pay 90%+ of bar tabs. You give them eye candy and the girls will spend at least as much time screwing around with the guys as they do mixing drinks.

I have been to exactly ONE bar in my entire lifetime that had what I would consider a top-quality female bartender, and that was at a high-roller bar in Vegas. Reportedly the girl's salary (not including tips) was over $150K per year. Other than that, unless you see a 30+ guy in a suit or tux, expect to be disappointed if all you're looking for is bar service.

Face it guys, it's all about the bling. SL gets racked from time-to-time for its service. It happens at HDR and it will happen at Dunn. We are getting what we ask for and have no grounds for complaint. I'm looking forward to it, but I'm willing to wait an extra couple of minutes and to explain how to make a tom collins.

SR

SL has the worst of both worlds, bad bar service and ugly bartenders. Sorry, use to be a supporter of the place but its gone downhill fast. Looking forward to Dunn Inn.

I've said it before, you have to hire male bartenders -- preferably over 30 years old -- if you want exceptional bar staff. Otherwise, you're stuck with mediocre service. 10 years in the bar industry -- that's just the way it is.

BK is like our Rick (Bogey) in the movie Casablanca. Also, I tend to agree about what Cujo referred to regarding the ownership of CB1 in Columbia. Was not impressed at all except for the "Columbia" Boyd who seemed like a good egg and was friendly to the guests. Just my rookie "first time there" impression.

Paco, three years ago I was told the same thing about poker dealers and we ran a team to US standards. The key is I will be there every night and if those things do not happen they will be fired. It will take some initial turnover but I guarantee we will accoplish those three goals. people perform the way they are managed and incented. These girls will be making very big money for Costa Rica and I will expect a lot and get a lot. Yes, if you have a Tico manager and leave it to it's own device it will be lousy service.

:? :? how much should we tip for a drink :? :?

i remember Jay at the BM, guys liked him behind the bar during the day so they could relax have a drink, watch a ball game with no drama. but once the party started there was no replacing the hot bartenders at the BM, sorry Jay, RIP.

how about Bill from the Park, is he still alive? he was a real kick behind the bar. when you saw him at 8am, he was smashed, and he was no differant at midnight. maybe he could produce a saturday night lesbo show and raffle off blow jobs.
baby oil anyone?

It's all about the money. If it is busy and the chicas can bring home real bartending money from a shift, they will be able to get professionals. As long as a spotter or manager is there to watch them and make sure things are going right. I work from my laptop at bars and restaurants a good bit and just out of the corner of my eye I see appalling service all the time. Staff's eyes should be on the bar and table area at all times. And a spotter's eyes should be on the staff at all times. haha Hell, I'll do my computer work there for only a small daily stipend.. :D

I made a last-minute trip to SJO, last weekend, and was given a tour of the Dunn Inn, by Boyd. I have never stayed there before, but I assure you that WILL change in the future. It is a quaint and friendly place as it stands today. When the new bar and card room are done, it will still be quaint, but ROCKIN! The older rooms are clean and spacious and the new ones quite modern. It will make a nice addition to Barrio Amon and between SL, DI and Amistad, we have plenty of variety to choose from. Boyd has alot of plans (chicas, music and crt parties) that will only complement the fun we currently enjoy at SL and HDR. I look forward to staying there in the near future.

I am not going to put up with it either. So, I recommend that if any of these hot chicas act up, you immediately send them to my room for some anal punishment! Then fire them if they do not correct their behavior.

Simpler, they may just want men to think they are as perfect as they want to appear to them, trying to hide what they consider to be the ugly truth about themselves. And I may be reading more into it than is there, but I do believe they consider the basis of the lies to be justified."

Good luck with this venture, Boyd. I hope it works out for you. Not sure when I'll make it back to SJ, but when I do, I'll give your place a try.

We are dividing the job of bartender and waitress. The bartenders will be more experienced and know how to make drinks correctly. All will speak English and be attractive. We will be very firm on the following:

1) Correct change
2) No assumed tips
3) You will not have to flag a waitress down to get a drink.

The list we have so far are very easy on the eyes.

That's fine, but personally I would not care if they had an eye in the middle of their forehead as long as they got one through three above correct. Personally, I really like the service at the DI, in the restaurant, bar and at the front desk. I contrast that with the improperly managed (or not managed) bar staff that I have seen in other nearby locals (that shall remain nameless). I would also have a non cellphone use when behind the bar and limit the amount of partying the bar staff is allowed to do with the customers as this leads to other problems, such as drunk bar staff making mistakes, having the liquid courage to lift some dinero, doing or saying something improper. Personally, I don't get it, the available girls are in front of the bar. :D :D
