Now that I have your attention I'd like to run this past everyone and I am posting my idea here rather than any other place because I think it might be fun.

The age range on this board is varied; I've met some people in their early 20s and others in their 70s' and every where in between. Most of us are single and have to either go to the local restaurant/pizza joint or bar for some food every now and then. At the same time we will also look past the beer or other libations in the fridge and see if there is any real food. The question is what to do with that food. I am not a short order cook or trained chef.

So on that note, sour as it may be, do people want to post some of their favorite recipes in this section ?? Maybe as an editable sticky ??

It could be some thing you created because that is what you had available or variations on a favorite that mom, dad, grandma or some one else has made that you enjoyed.

Say what you want but we all have to eat. So I'll start with my recipe for hot wings just in case others wish to follow:

Ingredients:
10 - 12 wings or wingette pieces; cut up if desired
24 to 32 ozs of peanut oil for frying; canola or other oil can be substituted if cholesterol is an issue
1/4 pound ( 1 stick) butter or margarine
Your favorite chili peppers, coarsely chopped. My preference is 2 jalepenos, 1 anaheim chili, 2 chinese red pepper, 1 ancho chili, and 1 or 2 habenero/scotch bonnet peppers with some cayenne for good luck. (The selection is yours based on your favorites and degree of heat wanted. If available I do suggest wearing gloves while chopping the peppers, especially if you are having a few beers while getting this ready.)
Garlic: fresh or granulated. I don't recommend garlic salt
Cumin or cumino
White and Black pepper
Hot sauce if desired
Vegetable of choice, sorry George H but I like broccoli
Pasta or potato, wonderful way of reducing the burn
Blue cheese dressing/dip and celery if desired. ( make your own or buy it)

Procedure:
Clarify the butter in a small skillet over low heat
Add the peppers and sauté them for a good 15 minutes.
Add the garlic, cumin, white and black pepper and continue sautéing for another 15 minutes or so. Keep this mixture on a low heat as not to burn the butter.
If needed or you want to, cut up the wings into wingettes: just follow the joint and cut with a sharp knife. I like to remove the wing tips as there is not much meat on this section and it makes a good gravy for other things.
In a large, deep fry pan, Wok, or skillet add the oil. Let the oil get to about 375 degrees Farenheiht/ 190 Celsius ( We are about Costa Rica )
Carefully add about ½ of the wings and deep fry until golden brown, usually about 10 to 15 minutes. Repeat for the remaining wings. Drain on a paper towel or paper bag.
Note: the oil temperature will drop after adding the wings so use an oil thermometer if one is available.
While the wings are cooking prepare your side dishes, whether pasta, potatoes or what ever.
PLEASE steam your vegetables if you are having some, or microwave them for about 3 minutes at 50% power. If they are frozen 5 minutes usually works.

I do suggest using a plate but the choice is yours

Put the wings on a plate and pour the sautéed pepper butter mixture over them. Should you be using a hot sauce; add this to the butter and pepper mixture, stir it in and then pour it over the wings. You can use a strainer to filter out the peppers and spices.

Add your side dishes, retire to the entertainment area, turn on your favorite sports team, pop in a movie and grab a beer or what ever and enjoy..

Tums or some other antacid does come in handy but depending on the heat you enjoy the next day can be a pain in the arse, literally.

Refrigerate leftovers and enjoy again.

I don’t recommend using your computer to read CRT posts while eating these wings.
Clean up of the kitchen, or keyboard can be a drag so put it off until the next day.

I put a couple of ounces of fine French Cognac in a brandy snifter. Then I put it in the microwave for about 5 secnds to slightly warm it and release the bouquet? Does that count as a recipe? :)
