Sluthog beat me to it... Dominical.
Dominical is about 4 hours from San Jose via San Isidro del General and Mt. Cherripo.
Rio Mar is a very nice resort. For more basic accomodations, try Tortilla Flats.
Roca Verde has a nice hotel, pool and a really great restaurant. American owners Frank and Dave will take good care of you.
While you won't need C.C. guaranteed advanced reservations. If accomodations are available, you will probably be able to reserve a room with a phone call 24 hours in advance.
I'd recommend Cabinas Coconut Grove, but I'm unsure about Diana & Richard's policy regarding chicas professionales.
For an upscale meal in a setting with a breathtaking view, try La Parsela. Dinner for two will run $60.00 or so, including a couple cocktails for each of you. The dining room has two views, one to the crashing waves, the other to a small marina. Very romantic for lunch & dinner.
Note that Dominical is hotter than Hell's hinges this time of year; best to find a place either right on the beach (Tortilla Flats, Roca Verde) or one with a pool (Coconut Grove, Rio Mar).
Mongering opportunities here are extremely limited, if they exist at all. Bar Mexicana in S. Isidro del General is a bar with chicas (per RBC100).
The population of permanent residents in the town is less than 1,000; about 10% are gringos and English is widely spoken.
