Matt,

Granted, you ARE posting this question here so everyone is assuming "Gringo Mongers" but - what is your target demo for the restaurant (NOT the hotel, the restaurant)?

Your Castillo location is right across the street from the INS building, Casa Amarilla, and the Cinema Center... are you looking to get the tico crowd in for lunch/dinner/happy hour?

Same model as the Amistad. Outside business is nice but not necessary. Looking to open something that is not already represented in the neighborhood. Like the Amistad, Chicas only by invite and not allowed to solicit. I am sure we will get some outside business from INS.

I love good Asian food; Chinese, Thai, Vietnamese, Korean and Japanese. If I wasn't staying in the hotel I would definitely stop by a couple of times a week during my stay in San Jose as long as the price / quality is on par with the food at La Amistad.

If I was staying at the hotel on the all inclusive plan however, I would look for some traditional dishes as well as the Asian cuisine, Definitely a good burger, fish sandwich, some Italian, etc. Basically some of the more popular items from la Amistad's menu (especially the Pork Chop).

I understand that all inclusive customers will be able to take advantage of both restaurants but it is not a trivial walk between the two hotels. One of the main selling points for the all inclusiveto me is the convenience. If I'm in the mood for a burger for lunch, I wouldn't want to hoof it down to La Amistad.

Good luck with the hotel opening. I look forward to the "new" Hotel Castillo. I used to stay there sometimes in the old days when I was on an extended trip.

I think Matt is very smart for surveying the public before embarking on his restaurant theme for Castillo.
La Amistad has a great reputation for wonderful food and I have witnessed many locals and tourists stop by for a meal. Matt knows what is being offered in the area, and Asian fusion is not available nearby. But is the market ( gringo tourists) up for it ? Will locals be enough to support that menu ??
Can the Castillo make a reputation from offering that menu, I wouldn't think so. But it can include some Asian dishes along with a more traditional DelMar/Amistad menu.

I don't care for seafood that much & detest sushi. Now, some good Chinese dishes would be nice, and I second the motion about pizza. Gonna have to try the LA pizza next week, see how it is...

Matt posted on the first post, that you will be able to move freely between both restaurants. So I'm sure what ever he decides on the Castillo menu if it's not to your liking on that certain day you can always go have dinner at La Amistad.

Myself, I'm sure between both restaurants I will find something that satisfies my taste buds that day. It can't take more than 5 minutes to walk from Amistad to Castillo even if your a slow walker.

Maybe continents not countries. North America (which includes Mexico), Central & South America, Europe, Asia (maybe some Mediterranean / North Africa). A few (1-3) representative dishes.

Not some 130+ pages. South Sudanese food sucks.
