I have no personal knowledge of the section highlighted, but I'll take your word for it - and if true, I'm starting to like Big John after all - at least in this context:
Nothing wrong with being a waitress <ask 20,000 aspiring actors in Hollywood

I'm really sick and tired of Ch*ldren of successful people thinking that they should start right at the top; a VP position in the family business may be a good starting place
Maybe being a waitress is the limit to her skills and talents
Possibly he wants to teach her the business from the ground up and what better way than to experience what "front line" employees do
Point is - you well could be right, but looking at it from another perspective tells some perhaps positive things too - possibly
Another point is his sandbox, his rules (although I've already posted that the relationship between the girls and the HDR needs to be symbiotic, as they both need each other) - having the girls buy a drink is not the end of the world, and "asking" them to "spend some time" at the Monkey Bar would have likely been met with blank stares, and being "yessed to death" with nothing happening.
Look, I'm not ready to nominate him for Humanitarian of the Year, but as Dr Phil says, no matter how flat you make the pancake, it always has 2 sides.......
