I'm a very wide ranging gourmet, but organ meats and testicles aren't usually on my menu. I will eat liver if it comes in as pate de fois gras. Yesterday, I had fresh shad roe for breakfast, yum! But, this thread brought to mind a story by a female friend 25 years ago. This gal came from a lamb ranch in Colorado and she told me that the Basque sheepherders on her Dad s ranch would bite the testicles off the spring lambs because it was the quickest most efficient way to do it. The nuts got spit into a big bucket and saved for dinner. The Basques that night would cook them up several different ways and have a feast and share some with the sheepdogs. That and a bota of wine and they were living large. |
