While I have yet to try Fuji here in San Jose, I did hit this place up.

It is actually a clone of the Huntington Beach location, I believe they have a third place elsewhere in Costa Rica.

Typically I think Japanese is the safest bet for a good eat. Even in crap Central European countries where I have despised the food, sushi is fine. But everyone I have been with has some odd repugnance toward eating it here or in Panama.

This time I went solo a couple times and once with a date. They have a happy hour (extends all night Monday) from 5-7 I believe. 2 for 1 on tuna rolls and their chicken skewers, $1 beer and some other items discounted 30%. On Wednesdays from 6 to 7, everything is half price.

The place is very clean, very pleasant, often has decent music (a real rarity in Jaco!!!!) and the prices are pretty reasonable. You can easily get full at happy hour for under 20 bucks and gorge yourself for 30 or 40 on Wednesdays. I would recommend the cajun tuna sashimi most highly (about $6.50) and, on the Wednesday, get a lobster roll (hold the rooster sauce or get it on the side, much better that way).

All in all I think Jaco is a ripoff for food with two exceptions (the white table clotch fish place between Beatle Bar and KFC, also the Quizno's for cheap ass sandwiches) so dropping 20 or 30 bucks on a meal that actually made me feel good was not a problem. I would recommend this place and I will do a writeup on Fuji when I try it, maybe tomorrow after a dip to Oasis.
