If you are looking for anything resembling a tamale as they are known in the States or Mexico you are in for a huge shock.I am not a fan of the tmale in CR.

Are the Tamales the large Columbian style, that are wrapped in banana leaves? My ex was Columbian, and I grew quite fond of the Tamales that her mother and Abuela made for special occasions.

Not sure what large is. In CR they are about 4" x 6". Filled with corn meal, pork, olives, rice, peppers, carrots wrapped in a banana leaf. Recipes vary. Especially popular and very traditional at Christmas.

I don't like those tamales wrapped in banana leaf. The meat, instead of being diced, is cut into cube chunks. From Mexico City and south, that's what a tamale is.

Greengo's book-tip is available on Amazon for from $18 (used--acceptable) to $164 (new)--no typo--$ One hundred and Sixty freakin' Four. Treasure your copy if you have one.

Boudmon is right on. The tamales of Central America are much different than tamales from Mexico, particularly northern Mexico. The masa is totally different, the stuffing as ID said is much different - not just stringy meat, and the Central American's wrap the product in banana leaves instead of corn husks.

If you eat a Costa Rican tamale be careful because they often leave the pits in the olives. I agree that the tamales from the local mercados are usually very good. In Nevada, California I often purchase tamales at Liborios. Que rico!

I came to love Costa Rican tamales. At first, they were too plain. But I could select my seasonings, sauces and extras such as cheese or onions.
