Hey Guys... want to impress your Tica with an easy summer soup?
Here's the recipe:
Summer Fruit Gazpacho All the tastes of summer, served chilled and shimmering. (Serves 4 to 6) 1 cup organic carrot juice 2 cups fresh orange juice grated zest of 1 orange 1 tsp honey 2 cups ripe cantaloupe, diced 1 ripe peach, peeled, and diced 1 cup fresh blueberries, rinsed, and drained 1 cup fresh ripe raspberries or blackberries Squeeze of lime juice (optional) Eight to 12 ripe strawberries for garnish Combine carrot and orange juices, zest, cantaloupe, and honey in a large glass bowl. Take out half the mixture and puree it in a blender or food processor until smooth. Pour it back into the bowl and gently stir in diced peach and the berries. Taste and adjust the seasonings, adding more honey or lime juice if needed. Cover tightly and refrigerate for several hours. Serve the soup in glass mugs, garnished with a strawberry on the rim. (For a real party, serve in oversized margarita or martini glasses, rimmed in lime juice and sugar.)
