Greengo is right about the typical ingredients in the Tico version of a cabbage salad. Additionally, their habits of refrigeration are not the same as the US. They will leave chicken meat, eggs and other items, which require refrigeration, out of the refrigerator overnight. That can include mayonnaise which they use sparingly.

I make it a rule not to eat things with mayo such as tuna salad.

Never eat day-old sushi.

DiegoC, thanks for your insight also. These are important things to think about, especially while traveling. One time in da PI I ended up with a bad case of the San Magoo squirts..Or was it from the street food. Oh well, good info. here you guys.

When you go to one of the resorts where they have an inclusive price - all you can eat and drink – be very careful in your food selection. Avoid any of the kind of stuff that you know goes bad easily. I avoid shrimp altogether at those kinds of places.
