Not a tremendous amount to do in Jaco during the day unless you surf. I always stay at the Copa (as are you). I get up, eat breakfast and drink coffee at the hotel restaurant. Then take a stroll up to the main drag, hang a right and walk the strip. Stop in at Wahoo's for lunch and drink the 2x1 beers and have a plate of fish tacos. Awesome with some hot sauce. Not to mention I think I am in love with the little Nica waiteress. Stroll back to the hotel and just hang at the swim up bar. If you like more adventure there are many places that can hook you up with a 4 wheeler, jungle tour, bike, motorcycle, zip line tour etc.. I've never done any of those things in Jaco but they are readily available. If you want to gamble, walk down to the south end of the strip. One of the hotels (can't remember the name, help me out Vets) has a small casino with a few machines and table games.
At night, the Copa is damn near ground zero for P4P in Jaco. From your hotel, walk back up the main drag and hang a right. About 1/2 block, cross the street and....viola. The Beatle Bar. The Del Rey by the sea. Talent, IMHO is higher in Jaco. Copa is chica friendly and you will almost always see the TLN chicas in the restaurant in the morning. If the beach in Jaco were not so damn ugly it would be utopia for me.
