Must I produce them with "proof" of the total fees ? Or do they KNOW, via the transaction details themselves, the amount of the ATM fee charged by the foreign ATM ?

Schwab's agreement with the card holder states they will reimburse all fees that are broken out of the total as a fee. I have never had it happen, but if an ATM operator figures the fee into the exchange rate, then Schwab could not determine the fee, so no reimbursement.
