Cujo,
That ATV tour is a half day tour which can either be done in the morning or, for guys like you, has a noon departure (
http://www.atvtourscostarica.com).
The canopy tours are usually only 1.5-2 hours in length (not including time getting there and back) and usually start several times a day as late as 2-3PM. I know that the Colinas tour that I had mentioned in that post has a 2PM tour IF you go there on your own. However I'm not so sure how late they offer pickups from San Jose. Similarly, the ORIGINAL Canopy Tour at Mahogany Park (near Orotina) also offers a 2PM tour and may offer late pickups from SJ PLUS they're a CRT Sponsor and offer VIP discounts (
http://www.canopytour.com/mahogany.html). I don't think they were a sponsor back when I made that post and will aid that link next time I update the post.
The 4-in-1? Sorry, but you're out of luck there. Not only are there no late departures, but it also gets back to SJ pretty late as well.
However, if early morning departures are out because of your nocturnal habits, there are still lots of those activities that you can do after "sleeping in". For example, take the bus up to Donde Alcides for an afternoon Pork Chop lunch up in the mountains.

The others made good suggestions for guys in general but ID is right, C21929 did say he was looking for something different. Jazz made a couple of interesting new ideas that WEREN'T on my list so I had to check them out a little bit more.
The ultralight idea sounded very interesting however I don't think it can be done that easily as a day trip from San Jose. I found this link
http://www.hangglidecr.com. They offer tours that are just 10 minutes outside of Jaco starting at $69 for 20 minutes (including transportation from Jaco). That wouldn't be a bad possibility for guys staying in Jaco. The problem for guys staying in SJ, aside from it being an extremely short tour for such a long drive, is that they only fly between 6-9AM and between 3:30PM and sundown because "this is when the air is naturally smoother making for an enjoyable, safe flight." So they'd either have to leave SJ really early or get back pretty late. Still its possible, so if you guys think I should, I'll add it to my list.
The 1/2 day cigar tour took a little searching. I couldn't find anything on Don Ursulo's website or mention of it on this site anywhere but in this thread either. What I did find was 1.5 hour "old-time" cigar rolling show at none other than the HLH/ZB
http://www.donursulo.com/club_membership.htm but nothing about anything at their factory in Belen. I also found a tour of the Vegas de Santiago plantation and cigar factory in Puriscal. You have to get there on your own by bus (or taxi) and there are few details of what the tour includes or how long it lasts (I believe the bus takes 1.5 hours to get there). Here is the link

Dance classes would be an interesting item to add to my "day trip list" but I don't think its really something you'd get much out of for just "one day". As JB suggested, its more something that you might try for an hour or two per day for a week. And that could be pretty worthwhile. Here is the link to the company JB mentioned (in spanish)
http://www.merecumbe.net/index.php. They have 8 locations around SJ, but I'm guessing that the San Pedro location would be the easiest one for most guys to get to (buses leaving every 5-10 minutes or so for the straight shot down Avenida 2 past the Mall into San Pedro).
