It's actually "Independence from Spain" Day in all of Central America (the former Captaincy-General of Guatemala) September 15, 1821.
Mexican Independence Day is September 16, 1821. The Captaincy-General was titularly part of the first Empire of Mexico until the Mexican Empire recognized their independence from Mexico in 1823.
July 1, 1823, the Congress of Central America declared independence (again) from Mexico, Spain and anybody else and formed the Federal Republic of Central America.
Costa Rica left the Federal Republic between 1838 and 1840. There's no formal date. The Congress agreed in 1838 that the countries could separate and the Federal Republic just sort of dissolved (officially it ended when El Salvador declared itself out in 1841).
In reality Costa Rican Independence Day should be the day they left the Federal Republic but no one kept notes (Ticos!).
The current CR flag is based on the Federal Republic flag.
Nicaragua, El Salvador and Honduras tried to unify again from 1896-8 (the Greater Republic of Central America). It was a failure. Costa Rica and Guatemala didn't join.
